Adam Randall decided that Adam’s Soul to Go had to go last spring. Rosedale Center diners quickly found a tasty replacement with Tio's Tacos
Randall launched Tio’s Tacos in March of 2024 in Rosedale Center’s Potluck Food Hall. Customers familiar with the eatery will still be greeted with the delicious tastes and aromas of Mexican pulled pork found and Jamaican jerk chicken, just in familiar taco concepts. Smoked wings with jerk or BBQ sauce are popular favorites as well. 

Randall pivoted to Tio’s after his research indicated mall diners lean toward familiarity, specifically tacos. Tio’s menu includes tacos on corn tortillas, nachos, quesadillas and loaded fries.

“Switching to Tio’s was absolutely the right call. We’ve broken all of our sales records,” said Randall.

Tio’s offerings are rooted in family heritage. Recipes are crafted from the cultural experience of friends and family, including Randall’s two foster mothers who raised him, giving him a family and an affinity for cooking.

“Soul food is less about the cuisine itself and more about who is making it and who it's being made for,” said Randall. “Real soul food comes from the heart based on family tradition, joy, and love. That’s what you’ll find at Tio’s Tacos.”

The fun alliteration of ‘Tio’s Tacos’ was a natural choice. “Tio” means ‘uncle’ in Spanish and is a natural nickname for Randall, an uncle to more than 300 nieces, nephews and their children.

Randall is interested in future possibilities. “I would love to open another spot in Roseville.”
