The best restaurants have a unique call to customers. “Baldamar talks to you, promising a truly magical experience,” said co-founder Randy Stanley. 

Fellow co-founder and wife Sharon Stanley describes Roseville’s Baldamar as a modern American steakhouse for the urban suburban. 

“Baldamar is not your father’s steakhouse,” Sharon Stanley said. 

 Warmth emanates throughout the upscale dining destination at Rosedale Center, from the oiled walnut and stone tabletops to local artisan works adorning the walls. Customers gravitate to distinct areas, which include the bar, cozy booths, and rooms for private events.

“Baldamar has everything the contemporary adult seeks, whether dining alone, enjoying a couple’s night out, or celebrating the latest deal with the team,” said Randy.

The upscale eatery is named after St. Baldemar, the English patron saint of blacksmiths. A Scottish bull’s head mounted in the restaurant nods to that lore.

The menu features high-end cuts of local aged beef as well as Wagyu, the Japanese beef known for its exquisite marbling and rich, buttery flavor. There’s also lighter fare including seafood, salads, appetizers, sides, and plates to share, offering the ability to spend anywhere from $25 to $300.

Items on their popular Happy Hour menu, available at select times exclusively in the bar, are priced under $20 and include Lobster Sliders, Short Rib Birria Tacos, and a $12 Happy Hour Burger.

For those in search of a true five-star dining experience, Baldamar offers all the indulgences including caviar, oysters on the half shell, lobster, filet mignon, and The Captain’s List, which features a selection of rare vintages and spirits.

“We have a grazing approach in mind,” said Randy. “But there is still space for those who don’t want to share!”

Baldamar is open for lunch, happy hour, and dinner. They host a Saturday “Champagner” Brunch, a Sunday brunch, and special dining events for holidays.

On Saturday, February 15 for Valentine’s Day Weekend, Baldamar will host The Veuve Champagner, described as a “singular experience set squarely between sophistication and self-indulgence featuring an extravagant unlimited multi-course menu complemented with Veuve, Mimosas.”

Baldamar ownership prioritizes staff training and innovation.

“Training for our highly educated staff is continuous, whether as developing a deep knowledge of our wine list or visiting national and international culinary experiences,” said Randy. “Our business is perpetually evolving, so we embrace new movements in cocktails or global seafood influences.” 

Roseville has it all

Randy Stanley cut his teeth in the restaurant business at Manny’s Steakhouse in downtown Minneapolis.  He and his wife currently own and operate 6Smith in Wayzata and Baldamar.

The Stanleys have long been aware of the Roseville culinary scene. They sensed there was room for a high-end, modern dining experience when they opened in 2020. The community’s demographics also matched Baldamar’s client profile: educated professionals with a discerning palate. Roseville’s proximity to Minneapolis and St. Paul was also appealing.

“Roseville has it all,” said Randy. “We committed to the Roseville community, and the support has been returned exponentially.”

Legacy concept

The Stanleys are looking for new opportunities in 2025.

“We continuously look for sites to purchase, or that benevolent landlord who understands the potential a high-end, legacy concept can bring,” said Randy. “We love Roseville and would like to give the community even more options!”
